Asparagus with Gorgonzola Cheese

 

Asparagus with Gorgonzola Cheese

Asparagus with Gorgonzola CheeseIngredients:

• 800g of Asparagus
• 50g of butter
• 200g of Gorgonzola Cheese

Directions:

1• Wash the asparagus and scrape off the stringy outside.
2• Cut them all to the same length and boil, tied together, in salted water with the juice of half of lemon.
3• Drain and arrange on an oven dish, cover the tips with the sliced Gorgonzola and cook at 200 till brown in oven.
4• Decorate as wished

Baked Asparagus

 

Baked Asparagus

Baked AsparagusIngredients:

• 1 Lb asparagus, washed
• 1 Tablespoon of Olive oil
• salt and freshly ground pepper
• 1 oz. of Parmigiano Reggiano slivers
• 1 Teaspoon of Balsamic Vinegar

Directions:

1• Preheat oven to 400F. Place asparagus and olive oil in a large baking dish, roll evenly until coated.
2• Arrange in a single layer. Season with salt and pepper
3• Cover with foil, bake 12-15 minutes until asparagus is tender. Remove from oven
4• Make 1/4 cup of thin Parmigiano Reggiano slivers over asparagus and return the dish to the oven. Continue baking just until cheese softens, about 2-3 minutes
5• Place the asparagus on warmed plates and sprinkle with several drops of balsamic vinegar.
Serve Immediately

Tomato Salad

 

Tomato Salad

Tomato SaladIngredients:

• 1/4 c Parsley, fresh; chopped
• 1/4 c extra virgin olive oil
• 2 tb Vinegar, cider
• 2 ts Mustard, prepared
• 1 ts Salt
• 1/4 ts Pepper
• 1 Garlic clove; minced
• 6 sm Tomatoes; firm, ripe, sliced

Directions:

1• Combine the first 7 ingredients, mixing well.
2• Place tomato slices in serving bowl, and pour dressing over all.
3• Cover and let stand at room temperature 20 minutes before serving.
